I used raidbots to sim my DPS, the number it gave was 13k dps. With Hero Rotation addon, I am able to peak at about 10.5k with cooldowns running, with sustained (against raider's training dummy) at like 9.5.
I'm pretty new to cat so every once in a while I mis-hit a key, but I generally am able to react pretty quickly to what the add-on is saying.
What kind of discrepancy do y'all get between your simulated numbers and your actual numbers (i.e., against a training dummy).

can be 5k dps over or under depending on the boss/situation. You would probably be on point with full raid buffs, agi flask, agi food, bursting pots and a decent executed rotation

Remember, you can always hit "show more options" and set it to no buffs, so you can get something you can compare directly to a dummy. I'm resto and don't really raid or even group as boomy much, so I was always boggling at the numbers it expected me to pull until I realized it was with full buffs, RA, consumables, and a hero in the middle.

Raidbots by default uses full raid buffs (battle shout, monk physical debuff, etc) it also has you using proper food, flask, augment rune, lust, and double potion. All that significantly adds up. Especially the lust and double potion.
You can go to the additional options and set it to no buffs to get a target dummy estimation.
Also rotational addons can only be so accurate in comparison to understanding why you are doing certain things at certain times. Without knowing your actual rotation it's hard to say what you may be doing wrong.
Setting raidbots to no buffs I'm able to sustain within 200 of what my sim is.
