The answer to that is the same as the answer to the question should a warrior be able to solo a warrior and a holy priest be able to solo a holy priest?
Yes, a holy priest should be able to solo most pure (non-hybrid) dps classes. It’ll just take a long time to do.
Also it depends on the situation, duels = yes, BG = yes if left alone, arena = unlikely with high dampening if all that’s left is the priest and a dps.
