What do I miss out on if I do BGs till lvl60?
You likely won’t have any story checkboxes ticked that will be required for any end game progression like soulbinds, conduits, legendaries, or even being able to choose your covenant.
Also, I just now realized why people say female dwarves don’t exist…

I can’t pvp and unlock them in some way through pvp?
I cannot say for sure, but I have yet to see anything of the like. At the bare minimum, you are probably going to be required to play through the campaign in order to unlock certain systems. In theory, you could just level through pvp and not give a care to the rest of the game, but once end game rolls around, all you will have will be gear, and you will fall behind.
