If you are using your professions to grind gold, then it’s probably not worth switching. Have you been Fishing/Cooking as well?
FWIW, I was skinning/mining also and fishing/cooking, and regularly farming mats to sell on the AH. It took me quite a long time to save up around 8K gold after getting epic flying, enchants, consumable stockpiles, etc…
One day, I went to a GDKP. I didn’t win any of the loot, but I left with 7K gold as a payout. I stopped collecting materials after that.
