So this is my first Darkmoon Faire ever and this may sound noobish but can you constantly save the tickets you earn for each faire or do they vanish after teach faire?
The tickets carry over. They're treated like actual currency now (check the "currency" tab on your character window) as opposed to holiday items.
They're considered a currency now, found under the Currency tab of your Character window, and they do accumulate. Any tickets you get this month will still be there next month, so you can save up for the mounts and such.

You can get wayyy more than 20 tickets per week the DMF is in town. Especially if you do dungeons/BGs with your journal you get from the faire and collect the quest items.

Assuming you win the roll for them; not sure if it was working as intended or not, but last month I picked up several for a week or so after the Faire was over, and it looked like I was the only one who was still carrying the journal.
Can also try buying them from the AH.
The maximum amount of tickets you can get from a single Faire week, without entering the deathmatch arena, is 150. This does require turning in every artifact, though, and a few of them are hard to find. One requires level 85. It also requires having a minimum skill of 75 in all professions and secondary skills.
Profession quests: 5 tickets each, with a maximum of 6 professions, making 30 tickets.
Carnival games: 1 ticket per game, per day. 5 games total, which can be done 7 times when the Faire is open, making 35 tickets.

If you are a low level and can easily relevel professions, you can make 36 extra tickets (9 more professions x 4 tickets).
If you can do BGs, you can make 15 more tickets (3 drops x 5 tickets)
If you can do non-heroic 5-mans, you can make 40 more tickets (4 drops x 10 tickets)
If you can do heroic 5-mans, that's 10 more tickets from another drop.
If you can do high-level raids, that's 10 more tickets from another drop.
If you log on at midnight on the first Sunday morning, you can supposedly do the dailies one extra time for 5 more tickets.
That's 181 tickets possible per faire without trying for the arena chest.
Professions quests are given for all of the various trade skills you can learn, both primary (leatherworking, enchanting, skinning, etc) and secondary (Fishing, Cooking, First Aid, and Archaeology) you can do these once per Faire I belive. BG's are Battlegrounds. These are Player vs. Player matches.

Reach level 20 and train the first level of Riding, then head to the zoo area at the back, by the boardwalk. In the back of it are little ponies and rams, just click on one and you'll mount it.

Great. That is just the info I was looking for. I was working on the Grisly trophy quest and just completed it today only to find out the Darkmoom Faire ended and I cannot turn in the GTs. I don't know if my grisly trophys will carry over or even if I will waste bag space keeping them but that is good to know about the tickets.

You will have to keep the quest in your quest log and trophies in your bags if you want it to carry over. Note that once you turn it in, it counts for that next Darkmoon Faire. So it's a loss of 10 tickets in the long.
That's thing with monthlies and dailies. If you miss any, there is usually no way to "catch up" with someone that has diligently done everything. Of course, there are only a certain number of rewards. Eventually everyone has everything and it evens out.

Yes. However they are treated as items instead of currency. They stack in your bags/bank until the next faire.
