Often, but not always, when I click the right button to turn in a quest (the NPC has the gold ? over its head) when mounted, it will not progress into the quest turn in dialog, but rather the standard left click dialog, with no ability to turn in the quest. Sometimes, backing away from the NPC, so that the dialog box will close, solves the problem, sometimes dismounting is enough to fix it, but sometimes the only way I have found to get to the standard quest turn in dialog is to quit WoW, login again, select the character, and enter the game. This has happened on the majority of characters I have. It started about two weeks into Dragonflight, but is not specific to DF areas (it happens in vanilla areas as well).

I noticed that you need to stand in front of some npc’s. As well as back at a distance. Others will turn around on their own and look at your toon.
I also use left click to interact because right click is attack.
There is also a option to set a key bindings for interaction in the menu.
I forgot to mention that often all the left click does is bring up the last dialog box or it does not have any effect. I have to totally disengage with the NPC and move before I can finally get to turn the quest in or get new quests.
