I just got cooking as a profession, and I cannot figure out how to level it up. My screen says “Cataclysm Cooking” (???) and it does not level.
I want to level regular cooking. I just want to start the profession of cooking and to craft recipes and level this profession. Can someone explain how to get just Cooking as a profession and level it? I’m very confused here.

Look at the filter on the top left of the screen. It will give you a selection of those cooking expansions you have learned. Select the one you want. The recipies you know will be light type, the ones you don’t will be below those greyed out.
If you look at a recipie it will show you how to learn it just below the description. You can male favorites stay at the top by selecting the star to the right of the name.
Materials for things you make can be in your bank, so you don’t need to have them in your bags.
you aren’t alone. all professions are confusing. Whenever I express that nothing makes sense other players just point and laugh at me. Whenever I say that I can’t continue progressing in professions they just gaslight me and tell me that I’m the problem and the game works just fine. (I’m not the problem – Blizz broke it and they gave very poor instructions). I found out just today that they expect us to grind faction rep to unlock knowledge points which will allow us to unlock recipes… which is explained nowhere within the game. This expansion is suppose to be one of the best in Blizzard’s history but it is honestly one of the worst.

And many things would be much more clear about knowledge points.
Also, only some points are behind reputation gate along with some recipes, not all.
Good luck I gave up on all professions this time even fishing. It’s too much a cluster of garbage and I’m not going to study wowhead to figure out the contrived mess they made. Yes I am actually pissed about the state of professions because that used to be my fallback when I got tired of dealing with folks in game. Now they force you to deal with teh worse of the worse by making work orders, spamming trade etc
cool concept on paper, horrible execution playing the market was incredibly boring these tier things are a joke
