I have engineering and herbalism on my druid. This is not BiS for PVE content but I do enjoy these professions.
Engi has the fun stuff already mentioned.
I world herb routinely and I can engi mote farm at the same time. I put on the Goggles (that never change on my profile pic LOL) and my herb tracking and I find the motes with red and the herbs with yellow. It’s super easy. I’ve made the same value amount that I would have with mining. I mine on another character.
Professions are mostly up to you, unless your guild wants you to super min-max or something.
