Can you run Raid Finder difficulty for older dungeons to get those variations of transmog?
Yes, there are various NPCs that will allow you to queue for LFR versions of the raids in different expansions.
You can look them up on wowhead.

Yes you can some npcs let you go in to them solo.

Yeah, there are NPCs. The MoP one is in Mogu’shan Palace where the Lorewalkers are, the WoD one is in your garrison and the Legion one is just outside the Violet Hold in Dalaran. Can’t recall where the Dragon Soul one is for Cata, it might be in Caverns of Time?
Yes. Dragon Soul and the raids after that can be solo queued to this day by different NPCs you need to talk to. You can do it solo or with friends in a raid group.
- Dragon Soul: Auridomi near the normal raid entrance in the Caverns of Time.
- Mists of Pandaria: Lorewalker Han in the Seat of Knowledge.
- Warlords of Draenor: Seer Kazal is in your Garrison sitting near the main building.
- Legion: Archmage Timear is to the left when you are going towards the Violet Hold. You should bring friends along for this since Legion is currently not set to utilize Legacy Loot and it takes forever to solo or can’t easily be done solo.
- Battle for Azeroth: Chronicler Toopa and Chronicler Shoopa will let you queue for BFA LFR in Shadowlands, following the trend here.
