Im not super familiar with how the crafted weapons work but I was wondering: If I craft say a staff, but later get a really good main hand or off hand, can I break the staff apart to craft an offhand/mainhand?
Or do I have to craft an entirely new weapon?
New weapon I believe. Never heard of breaking apart gear for mats in this game.
You can’t break down a crafted item to get the spark(s) and crest back.
So yes you’d have to craft a new weapon in your scenario.
So the answer is craft the 2H and consider it your BIS.

This one. When you craft something youre stuck with it.
But the beauty of crafted gear is that you can carry it through the seasons with you.
S1 you had Omen crafted + Gilded enchanted crests = 636 ilvl
In S2 i can upgrade that same weapon again with corresponding enchanted crests for 675 ilvl (minimal materials needed if you do a direct upgrade. No need to make a brand new weapon again, can just re-craft to a higher ilvl)

You have to craft an entirely new weapon. 2-hand is still the better investment imo though because you’ll get more sparks and crest cap will inevitably go away eventually. Don’t worry an insane amount about it.
The sparks are a break because either your pay 2 for a 1H and offhand or 2 for the 2H…it’s the enchanted crest that is the real sting because a 2H weapon still only takes 1 enchanted crest (it really should’ve been 2 to equalize things…or more fairly 1H weapons are crafted as a pair same as 1H and offhands).
Ok, that’s what I thought but wasn’t sure.
Guess I’ll stick to my crafted staff. Too much of a hassle and waste of materials to try and recraft a one hander

Upgrade the staff to 675. No need to replace it with a 1-hander, ever.

It’s all a calculated risk. If you do 2H then you’re locked in for the long term. If you do 1H then it frees up a spark to make something else like a bracer, but costs more crests.
There’s no objectively wrong answer, better stuff showing up in the vault can happen no matter what you make, just have to pass over that selection and pick something else.
I must say the way 2H and 1H weapon pairs are handled is freaking weird.
2 1H need twice the resources to upgrade vs a 2H. Crafted, it takes twice the enchanted crest.
It’s also darn annoying that enchanting can only make the main hand (wands) but not the off hand - why can’t enchanting make magic lanterns or something for off hands.

You would have to craft an entirely new weapon, there is no way to scrap items anymore to return some of the base elements of them, like the sparks. Honestly should be a thing in game, yet blizzard being blizzard is too allergic to anything that would be a serious QoL change given it would affect their MAU numbers.
Wait until you see the costs fury warriors have to incur with weapon crafting. In all honesty crafts should only require one spark, it’s already a dated mechanic of 2 handed weapons needing two sparks, given it makes two hander classes be forced into an awkward position of having to wait four weeks for their weapon craft. Which when combined with the even more brilliant idea to make the BiS sigil only usable on weapons, it makes a lovely recipe for disaster that dishes out in people finding exploits, like they did recently, to get extra sparks early.

Because crafted gear shouldn’t be doubled up coming from multiple professions to fill the same slot. Furthermore, enchanting doesn’t need to be able to make gear as well, so the idea of enchanting taking that from inscription feels a bit like as if Blacksmithing could make gadgets or mounts - the things that engineers specialize in.
Jewelcrafters can make mounts as can Alchemist.
The idea that enchanting can only make half a weapons set is kind of stupid IMHO.
