I Uninstalled WOW but I copied my AddOns folder, THOUGHT it would keep all my profiles / settings if I just pasted right back into a new installation of WoW…

Someone care to elaborate why and where they store the cache for the addons profiles/settings? Cause it’s obviously not in the AddOns folder lol
Pretty sure the configuration for your mods is in the WTF (Warcraft Text File, not the other thing) folder. You need to copy both that and the Interface folder that actually has your mods in it.

WTF folder stores your default UI settings, cvars, macros, bindings, saved addon variables, etc.
If you didn’t save this folder, its time to improve your UI. ( 
)
Look on the bright side, you now know and forever will know what the WTF folder is, and WTF you need to save it. WTF you are making a copy of your wow profile so you never have to say WTF.
