In assume you mean profession knowledge? You never could, outside a few 1 time books. You get them mostly from orders.
He probably means those knick-knacks you could turn in to centaur lady.
It’s all Patron Orders, daily, over many many many weeks, if you really want to catch up. The wow mod WeeklyKnowledge helps you get the obvious weekly stuff and “uniques”, but after that it is really just doing every single Patron Order every day until your eyes bleed.

They’re one-time but you can still buy a nice chunk of knowledge books from renown & basic prof skillup acuity.
There’s also no need to “catch up”, you can make anything you want in any branch the first week and can quickly fill out the rest after that. Way cheaper now than it was at the start of the expansion, too.
(Getting knowledge points is also way, way, WAY faster than it was in Dragonflight.)
Do you mean the books and acuity? There are a lot now from Quartermasters, even up to Undermine and K’aresh.
As to catch-up, I started a leather-worker and skinner pretty late and they had me moving along fast. You know how you get five bits and an end bit every week, those things kept dropping and dropping.

Look up profession treasures and renown profession books, you can easily fill whatever branch of the profession specialization tree you need to craft what you want at max rank
If you want to be able to craft everything else, get ready to grind for points or start leveling alts for every other profession tree branch

I started a LW/Skinner at the same time I started a BS/Inscription – the LW/Skinner was finished so much faster than the other. BS is a pain

Nobody knows what you mean exactly, but professions have a form of catch up mechanic this expansion. For gathering, you need to have gotten everything you can in a given week, i.e. the weekly, the treatise, random treasures knowledge, and then if you keep gathering, you’ll gain catch up knowledge. They are rather rare though so good luck.
For crafting profession, it’s all about the patron orders.
