I am rolling drawf priest and undecided for racials
considering tailoring, enchanting and engineering.
What two should i choose? I am going to pve & pvp.

Mining/Engineering —> use mining to level Engineering, then consider dropping Mining for Herbalism at Level 60 (or post-40, when you have your mount)
Engineering/Enchanting —> really need an alt to provide materials, or this will be a very expensive money sink
Mining/Skinning —> sell the ores you wont need for leveling engineering, then drop skinning at level 40 when you have your mount for Engineering
Mining/Herbalism —> same as Mining/Skinning, but drop mining or herbalism depending on what you want to do at Level 60
Mining/Enchanting —> sell ores to supplement your Enchanting
Herbalism /Enchanting —> sell herbs to supplement your Enchanting
Mining typically is more profitable early, because copper ore is in high demand and new players dont have extra gold to blow on potions. However, Herbalism will likely be more profitable late game because the demand for elixirs and flasks will exceed the demand for non-Arcane Crystals.
I myself dont care for Tailoring as a primary profession because the gear/bonuses arent as great as in TBC.
You get gear very slowly in Classic. And bags are expensive. For my priest, I’m going tailoring and skinning. Tailoring sometimes needs leather, and I can sell whatever is left.

I’ll also plan to go skinning and Tailoring to level and fund my level 40 mount. After I hit 60, I’ll plan to drop skinning and pick up Engineering for PvP purposes.
I’m going Tailoring/Enchanting. I know it’s not the Min/Max route to take, but I feel those 2 really sync well with the class persona.

if you’re healing, You’ll want tailoring for Truefaith Vestments, they’re BIS til AQ
Mining and Blacksmithing so you can help gear the warrior you’re healing
Being able to make your own mooncloth set as a tailor for priest is great endgame as it helps fill in gaps when luck doesn’t go your way. Mooncloth can be pricey.
PVP: mining/eng
PVE: tailoring/chant
Although, eng is also good in pve.
Just IMO.
Priest needs tailoring for the BiS BoP crafted chest.
The other prof is open to interpretation.
Same… maybe I’ll be able to afford to switch to Enchanting later on…
You could very easily trade some skins for a wand as well. Shouldn’t that much of a problem if you’re sociable enough.
