I have never done professions, I usually hate them in all games for one reason or another but as I’m looking at my roster I find it may be beneficial to kind of help myself out here lol.
The problem is I’ve never done them so I’m unsure what would be best. I’ve started chipping away at enchanting but I’m curious what you guys use and for which reasons.
Even if I’m not making gold I’m sure I’ll be saving gold not buying everything for 20 different alts. But hey, if gold making is a side effect I’ll take it. Is there one that you guys find particularly helpful or dare I say, enjoyable? 
Historically the problem with crafting professions has been that they’re either worthless or require such a large investment that you’re priced out the market by people already established. Gathering professions (skinning, mining, herbalism) are always in some demand and have low barriers to entry.
My recommendation for a new player who’s not looking to get deep into the systems would be engineering. Its the one profession that really focuses hard on making things for your own use, and has a lot of helpful, unique perks that other crafting professions can only dream about.

Mining and herbalism are great for making money, as you can just sell mats to the people who are too lazy to gather for themselves. Alchemy is good because you can make your own flasks and potions and save a ton of gold for yourself that way. Enchanting is a great way to make use of all the drops you get and don’t need, this expansion seems to have a ton of low level BoE drops all over the place presumably just for that reason, and again you can save yourself money by sending enchants to your other characters instead of buying them (and they are currently pretty pricey). Tailoring is also good for making yourself bags.
Fishing and cooking are good to keep leveled up on one character too, mostly for making money but if you’re at end game you’ll, again, also save money not having to buy food off the AH for yourself.

I’d recommend getting into armor smithing and pairing it up with the appropriate gathering. So Blacksmith/mining or Leatherworking/skinning for example. You get an immediate benefit of crafting your own gear, and you won’t have to keep track of too many weird small random items. After you make yourself some gear, you can start playing with the auction house and then move onto crafting orders. Just a nice simple goal orientated trade skill.

I’ve always liked skinning. There are always angry animals along your path. They can be a constant irritant, or they can be a revenue stream. It ain’t big money, but it’s enough.
