It’s probably been mentioned before, but I think knowledge catch-up needs to be worked on slightly. Patron orders are great, but we’re still limited on how many show up per week. If you miss out any days or even a week, you have more catch-up that adds up however, you don’t always get that full catch-up.
Which brings me to a way to get some of that catch-up back, profession Treatise from Inscription. Currently it only gives us 1 per week, but having that somehow tie into the catch-up system allowing those who miss out on catch-up having a way of getting some of those knowledge points as a repeatable crafted way instead of just relying on patron orders, which at times can be very costly mat wise.

Long story short, any week you don’t use a Treatise you will get the chance to earn that point from a patron order. Same is true for the KP tokens in the treasures. If you aren’t getting KP patron orders you are at the KP token max and will only get the Moxie and Rune orders until you miss a treatise/treasure again.
But your point is a good one and people who start a new profession later in an expansion are at a disadvantage because of how many KP tokens they need to catch up on. One way to help with this would be ensuring crafters who are really behind that they’re more likely to get the 2-point token orders with all mats provided. But users who are only behind by, say, four weeks of unclaimed treatises/treasures; those users can relatively easy get fully caught up just from regular patron orders.
One idea to add to this - it would be really nice if a zone’s one-time KP treasures increased their KP with every season. So next season the ones in the current four zones could give, say, 5 KP, and in the third season bump it to 10 KP each. I seriously doubt anyone would delay looting those for the boost, but if you start a new profession in Season 3 you can get more of the tree unlocked while it’s still useful.
