Apparently, the in-game settings on whether you keep your profession equipment visible is not being retained from session to session.
That is, if I set it so that I switch back to my normal transmog after gathering or crafting anything (instead of visibly displaying the appropriate profession equipment), those settings are not retained the next day. (Logging out to character select or out of the game entirely does not appear to affect those settings, but perhaps the daily reset does.)
Same here. I have noticed it with my herbalism which I have since unlearned in place of blacksmithing. Will report back if my mining has the same issue.
Same, I go to Dornogal and turn it off and the next time I log in it’s back.
Can cofirm this has been happening to me ever since the latest patch.

I have recently found myself tired of seeing the mining equipment after doing some mining while farming wood and had thought about turning it off. Guess this is my sign to wait until these fun new bugs are fixed. 
Same issue here. I manually set it back to hiding the gear and it was fine for a few days, but logged in today to find my equipment was visible again. Super annoying.
If I wanted to see my Enchanter Hat on my head when I logged in, I wouldn’t have turned it off in the first place.

This is a pain. But I’m sure with this many complaints on the forum and many more directly on their list that this will probably be fixed.. maybe a month into the new expansion?
I thought I was being gaslit, but no. I mean, technically yes, but also no. Bug’s happening for me, too.
Reverts back every session.
Really wish they would fix this. Hoping they get rid of the need to go to an npc if you want this turned off and turned on. It should be off by default though.
