Was wondering what would be a good combo for my Blood Elf mage. Enchant/Inscription or Alch/Inscript?
Depends on your goals.
If you’re looking to make a little side money Alchemy is probably the best way. Enchanting and Inscription don’t really pay for themselves.
If you don’t already have an Herbalist, you’re going to want that to feed either Alchemy or Inscription, otherwise they will eat into your gold supply. Enchanting CAN be fed by just things you pick up along the way, but you’ll need time to build up a stock of mats before you can do anything meaningful, otherwise, you’ll be shelling out money for mats as well.
If you’re just trying to go “thematic”, Enchanting and Tailor used to be the “go to” for mages, and Blood Elves get a small bonus to Enchanting anyway.
There are a lot of variables, so you’d probably want to provide more information to us before we can help you answer that question.

You’d probably make more money off Enchanting than Inscription, but Inscription/Alchemy would only require a single input source.
If you take Enchanting you might have to but mats or low level gear to DE.
Alchemy is probably going to be your better source of income.
I’d suggest Engineering as a second option for a bit of fun, but that also takes some work to unlock the good stuff.
Go enchanting/inscription
You’re a blood elf and that gives enchanting bonus skill. It will let you use one green accessory (not the main tool) instead of blue. Or less concentration if you have all blue tools.
You will also be able to catch up very quickly. Enchanting is the one crafting profession that works like gathering professions when it comes to catching up.
However please note that you need to do the weekly things first before catch-up can be applied: do the crafting trainer quest, get 2 treasures, get the weekly disenchant drops. After you do those things your disenchant will start dropping catch-up skill.
If you go into inscription to make cards you can disenchant the trinkets. Purple items have a higher chance to give the catch-up.
There are four card wheels. You just need to get them to halfway to get the maximum drop rate. I’d recommend follower dungeons to get them. Spam darkflame cleft before the first boss. It takes only a few minutes to clear that trash but because there are so many mobs there you will get 7-10 cards (when maxed). You can also sell cards obviously.
