/shrug You can set the stats you want, but other than that it’s just about whatever gets you the highest rank version possible. Just remember that you can always get it recrafted later.
Can’t really go wrong with either Darkmoon Sigil: Ascendance or Elemental Focusing Lens, and unless they’ve changed it Ascendance is affected by Writhing Armor Banding, so if you get that for your second embellishment you get even more free stats for staying in combat.
Finishing reagents aren’t that important for the customer, they mostly do things like reduce Concentration cost or increase the chance at gaining a skill point when crafting. Might reduce the price for the craft if they’re not keen on spending Concentration on it, but if you have the gold and materials they’d probably blow however much they had to anyway.

That’s for enchanted crests, can’t do anything with that until you’ve got a good few Runed or Gilded Harbinger Crests to turn into an enchanted crest. Both of those drop from Heroic / Mythic Raid, as well as M+ keys of +4 to +8 and +9 and above for each type respectively, assuming the comment I read was telling the truth.
You can click on those slots to see the options available, by the way. Just a matter of finding the one you want. There are class guides in wowhead that usually include gearing/crafting sections that you can take a look at.
