Druid because they are the most mobile
With my guild, all are fun. With a pug none of them are fun. Which is why if I’m healing or tanking it’s only with guildmates.
You mean healer or tank?

To preface, I have each healer and tank spec leveled to at least 400, most of which are 415-435 except shaman because they bore me (which is relevant here). I’m going to list this as what I enjoy not necessarily what I think is the best.
For tanks;
Dh
Warrior
Druid
Paladin
Brm
For healers;
Mw
Paladin
Druid
Disc (although I’m god awful at it and refuse to heal keys with it)
Holy priest

Prot Warrior / Holy Paladin.
Honorable mentions go to Blood DK/BM Monk and resto druids.
I find Prot pali to be the most fun Tank. The amount of defensive cooldowns and utility they provide beats other tanks.
Healing I enjoy mistweaver the most. Just the joy of being able to single target heal a target from critical to full health in seconds is great. Really fun in PvP.
Close second is holy paladin. Being able to beacon of virtue, holy shock, grace of the justicar, light of dawn, crusader strike and holy shocking again to spam out massive groupwide healing is fun. Though they lack strong single target healing without beacon of light. It’s a trade off.

Warrior and who needs heals?
No bias here 
Healing- I can really only say druid as thats all i have done, but i am trying to get back into holy paladin healing. Switching from dot to shunk healing is tough for me so my transitions are not smooth.
Tanking- I have been a massive fan of prot paladin due to its ability to adapt to the affixes very well. Say we have a bursting week and I want to give a helping hand to our healer. I also love wings as bear/demon hunter really lack a number pumping button that is valid and optimal.
The damage and utility seem to just far outweigh other tanks in my eyes although I have seen all other tanks shine very well.

Warrior seems the most fun. Druids actually seem less fun then what they used to be for tanking. Demon hunters feel like a game of hop scotch.
Healing I toss it up between priest and druid.
I don’t heal, so I didn’t vote on that one. But if you’re talking FUN alone, obviously the most fun tank is brewmaster. Because what’s not fun about tossing kegs of beer, drinking, and spitting fire breath?

We are over saturated for good reason just simply the best and most fun
I personally voted for disc priest as healer because I love heal through doing some damage.
As for tank I voted for protection paladin because the amount of defensives the spec provides plus the damage output which is one of the highest and of course throwing an Avenger shield is always fun to watch
