There are custom emotes to write up in a macro.
Imo, the spit whiners are the ones even basic lua macros escape them. or just too lazy to do it. Some of the finest pvp trolls I’ve seen…I go well at least they put time into a macro, there is a cool point for them.

It sucks the emote is gone, but I never really used /spit anyway.
/pity, /question, /guffaw are all superior.
And then there’s banners and other toys you can stick into corpses, even better.
I just bring out D.I.S.C.O. and start dancing, usually.

Asmongold’s harassment campaign didn’t help, but folks were using it for other reasons as well. There were several different addons that folks were using that automatically spat at people at random, and a lot of them also coughed on people.
Remember that this happened during the Covid-pandemic. Asmongold used it to promote harassment, whereas others were using it as a way to try to bring Covid into WoW. Then on top of that it was primarily used by immature PvP-players who spammed it endlessly in PvP as a way to piss off people.
The emote has virtually zero reasons to exist, and people kept adding more reasons for it to not exist. That’s why it was removed.
I thought the draenei would be a good reason enough for you to want /spit.
