Playable Centaurs are a unique fantasy that wow is now uniquely capable of delivering on.
With Drakythr having limited transmog options this opens up new options if this sort of solution remains on the table.
An easy solution to the mount problem could be to allow the Children of Ohn’ara birds to carry the Centaurs by the shoulders. The rest of the issues are rather easy to resolve after that for the most part at least.
There are a handful of other races I’d like to see become playable first, but the ground work has been done, the models have been update, question is does the WoW team have the will and the drive to deliver on this? We shall see.

I fully support Centaur for the Horde and Cenarions (dryads and Keepers) for the Alliance.
I don’t think transmog is a problem at all. They could have legs and foot armor do a wrap type effect on them, or as you said just not be moggable period.
The mount issue is definitely the biggest one, because Blizzard uses mounts as major incentive for completing content and is going to be very leery at the idea of adding a race that will not benefit from that. That’s one reason I theorize they’ve left Soar as useless as its been the whole expansion - they wanted Drac’thyr players going after DR mount customizations, which they would have ignored wholesale if they could just do dragonriding effectively themselves.
Unless they have some kind of full body transformation (which would be somewhat plausible for Cenarions but very weird for centaur) that lets them mount normally I think it’s going to be hard for Blizzard to move past that.

Good luck making their models work with mounts, especially flying ones. A horse riding a dragon is going to look hilarious and being carried doesn’t work with all mounts.
I’d def roll a Centaur/Kolkar type - especially if the swarm of flies are included.

The story could be this:
With a new front of problems, Horde is fighting against the void and the legion, new allies have arrived to help the fighters.
Cenarius observes the bravery of the centaurs and decides to bless them with wings, which, when concentrated, can fly at incredible speeds, thus being useful for a new war that will extend into the future.
This has already happened, with the tauren… and some other heroes of the past.
It could be the cenarius or some aspect.
They would be left without flying mounts (they will fly by themselfs), ground mounts would be their passive skill that allows them to run at 140% outside of battle… and that’s it.
The wings could be customizable: wings of fire, ice, ethereal, colored in different colors, sizes, shapes, etc…
The NPCs already have armor (the new NPCs) that exemplify what would come for them.
Leg armor, shins (feet) are easy to adjust, they could create new slots or become magic slots (like the dractyrs’ backs that disappear in their standard form but are providing bonuses).
I’m almost positive they will never make a race playable that has more or less than two legs.
They put way too much time and money into mounts.
