If people actually liked flying then Vashj’ir would be everyone favourite zone but isn’t instead its absolutley hated.
People don’t actually like flying, they’re just looking for something to complain about.
Look at the new buzzword crying about “borrowed power” like set bonuses and powerful trinkets haven’t existed since the very beginning. Power you borrowed not something permanently added to your character like learning frost nova

People like flying. They don’t like zones deliberately designed around a Z axis where a 2D minimap is often zero use for actually finding anything.
I tell you a zone that was built around flying that people did like, though. Deepholme.

Also, I’m pretty sure the complaints about the zone are more fighting in 3D not navigating.
It’s a zone where you can fly 100% of the time, even without a mount.
You can even go above and fly away from any mobs entirely.

Thalassophobia is a real thing, too. Even if the zone has free movement in every direction, even in video games this fear can hit someone hard.

Take demon hunters when I infernal strike i go straight to the bottom my Sigels go straight to the bottom… some hunter and mage have same problem…
People get honestly disoriented underwater zones …

Vash’jr is hated by a lot of people because they could never get the mechanics of the zone right. With spells pathing to the sea floor and back up, pets going bonkers, etc. it was a problem for a lot of people. Those problems have nothing to do with flying.
