Probably sounds like a silly question, but can I earn pathfinder part 2 on a separate character to the one I earned part 1 on? As I don’t really play the character I earned part 1 on anymore… If not, all good, ill just roll with the original one again.

Yes you can. Pathfinder is account wide so once you get the achievement you have it for every character. So you can even do pathfinder 2 on a character of opposing faction if you wish.
The only caveat is that your character needs to be caught up in the story line because completing pathfinder 2 requires you to continue with the story.
