My friend is going to play a Mage in Classic.
If we go Alliance, I will choose Paladin
If we go Horde, I will choose Priest instead.
My only concern is, what should our talent trees be like if we are questing and doing dungeons together? We will not be speed-hardcore leveling, but we don’t want to go to slow either. What talents should we pick?
Also what professions should we take?

Can’t speak to mages really but I suspect a frost spec toss-up between a single-target build or an AoE grinding build, depends on what you wanna do (more quests and dungeons, or grinding?)
For pally I’d say Ret until SoC and PoJ, then go into holy to at least spiritual focus, then keep going down ret to improved ret aura and 2-hand spec. Then back to holy for Illumination, then finish up ret.
Wand spec for priest.
for mage spec frost and just pewpew.
for paladin, I like aoe tanking when im a din.

I like priest / mage best. you both bring a lot to the table. both are strong endgame and will be able to form 5 man groups fast for dungeons. dis/ holy smite build would be good with a frost mage. skip Tap on the build because the Mage will get 2/3 of the final kills. u can do good damage and heal when it is the two of you and be a great healer in groups.
pally/mage may be problematic IMO. he will bring more to the table. ppl want pally tanks for 5 man so you would want to be more tanky (prot/ret). you would aoe tank loads of crap and he would aoe dps it when you where together. PPL will take pally healers for 5man , but if you are more of a holy build (holy/ret)I don’t think you would help as much when u quest together after 35+ .

being a prot/ret pally up to 60 raiding works very well , but you will most likely want to switch to heals when you start raiding. the standard prot/ret pally lvling build is in this guide

you can be more of a healer as you level, but some where around 32-37 you will have issue healing 5 mans without some points in holy. as u put points in holy your tanking /dps will drop. it will still work but he will be carrying you on the on the final 1/3 of leveling.
duos split kill xp. so you need to double kill rates to be effective. all three are good up to the 30ish range . pally heal will slow your friend down to 60.
I personally like priest best because you wont be gimped if the duo falls out (you need to stay within 3 lvl of each other or it can get frustrating for the higher lvl toon) and you end up soloing a lot. soloing a pally is slow ,soloing a healing pally after 30+ really really slow.
