Working on my UI, and currentinly, in my interface, there is only the option to have 5 action bars, instead of 8?

Yes. Use an addon if you want more.
Use bartender addon on curseforge. You can have up to 10 action bars with it.

Probably not, but I like using them for sorting purposes.
if you use shift and alt keybinds thats like adding 2 whole new action bars
no changes use only three
yeah 5 seems to be the perfect amount for me 
but you have addons if you truly need more
seems like plenty to me. Thats more slots than I can reliably keybind anyway.
1, 2, 3, 4, Q, E, R, T, F, G, Middle mouse click + all the same keys + shift is all I have bound and its enough for the skills I mostly use being a button away without being too many. I thought about adding a 3rd level of these binds by using all the same keys + CTRL but thought that might be too much to do consistently.
EDIT: I guess I have another layer to these keykinds for stuff I don’t need quickly like buffs where I Shift + scroll down and it brings up another bar that uses the original keybind buttons but with different skills then mainly used.
Yeah. Most classes can fill up at least 3 just with class abilities. Then you might want another bar or two for class ability macros. Then you might want a bar or two for all your potions, elixirs, food and other consumables. Then you might want a bar or two for all your engineering stuff. Maybe a few more macros for weapon/shield swaps. Probably some other miscellaneous macros.
Filling up 8 bars is easy. I keep most of mine hidden though. If I know the keybind and it doesn’t have a cooldown I often put it on a hidden bar.

I just checked. I have the number of action bars I have always had in Classic. Which is 6. Of these one (strangely the one numbered 2) remains hidden, the other 5 can be arranged visibly over the bars and to the right. It was always like this. Nothing has changed.
I use the add-on dominos and with that you get 14.
I don’t use addons.
Depends on class.
Vanilla shaman have roughly 1,618 totems to slot.
