Tauren are seriously lacking. Highmountain have so much more to choose from and I’m honestly jealous. Particularly of their hairstyles, tail options, horn decorations, and nose rings.
Tauren have no tail options, no tail decorations, 3 hair styles, 1 horn option that has a decoration built in, and 1 type of nose jewelry.
I will say I think Tauren have far better fur colors, but that’s it. I’d would very much like to see Tauren get more options like tail types, tail decorations, more hair styles, and certainly more horn decorations.
I’d also like to see Highmountain Tauren gain access to more Tauren fur colors. Right now they’re seriously lacking.
It would be nice if both races could share more options overall. Highmountain have lacking body paint/colors,

How can High Mountain have horn decorations when they don’t have horns 
I don’t pay much attention to Tauren, but if High Mountain have more going on than normal Tauren that would be very surprising.
The trend with Allied races, especially first release/legion allied races is that they’ve generally been overtaken by their parent race when it comes to customization options.
It’s true for the Lightforged and Mag’har, at least.
More customization options would be nice to have, though significant expansion to customization options for current playable races seems to be unlikely to happen at this time, especially with the current focus on new playable races and more customizable mounts (and also probably new customization options for Dragonflight mounts).
They also might do customizable Cat and Bear forms for Druids ahead of opening the class up for more playable races, since I’m not sure I see them adding unique racial forms for every single playable race.
We’re probably going to mostly just see stuff like new hair colors and skin colors until there is less focus on other areas like new playable races, multiple customizable mounts with more customization options than most playable races, and new Class-related customizations. So probably we’ll get something like red, yellow, blue, pink, and green hair for Kul Tirans, Mechagnomes, etc. in the near future if we get anything at all for the older playable races.
Don’t forget Dark Iron Dwarves, Mag’har Orcs, Zandalari Trolls, Kul Tirans, Mecagnomes and Vulpera still waiting to get new customizations meanwhile other allied races get some new customizations.

Looks at void elves… yeah, not really. While all the other Legion races received a bunch of new options, void elves pretty much remain with the same options. No new hair styles, no jewelry, no tattoos, no new void stuff etc. You can’t even begin to compare them with the Nightborne and the others.
I’m pretty sure the devs deliberately ignored them because otherwise, hardcore Blood Elf players would have another temper tantrum. Where the devs were already so lazy to not give the race a modified model like the Nightborne, let alone reasonable lore, a city, and a zone, they might as well share all options with belves. This way, belf players won’t have nervous breakdowns anymore when they receive all the things the Void Elves would get. 
Female Tauren (both kinds) still only have four faces. FOUR! In 2024.
Males aren’t much better, we only have 5
