Is there a reason I can’t buy armor ensembles from the court of night vendor that aren’t the armor class my character is? I suppose when it was initially implimented, that would have made any sense, but now it would be nice to be able to get a specific gear set without spending the amount of time it requires to get a character to exalted with them twice.

I too wish we could learn other types of armor and all weapons. Even if it means not being able to mog it on that particular character. It would make collecting feel a lot better.
You basically answered your own question. It’s not your armor type for your class. That’s how transmog works. Even if you could buy it, you couldn’t learn the transmog.
They’d have to do one of two things:
- #freethetransmog and let everyone learn and transmog anything
- make Covenant sets BoAs to send to alts
Either way… they’re not gonna do it. 
Ensembles don’t work that way, though. You can use ensembles on a character that can’t use the item it contains. For example, if you get the ensemble for the Warglaives on a Warrior, they’ll be able to learn it, but they won’t be able to use it.
The armor ensembles from Court of Night absolutely work that way. There are separate ones for cloth, leather, mail and plate.
Bobby needs those time played metrics for the shareholder meetings.
Oh, I know that, but a person that isn’t that armor type would still be able to absorb those apperances, and would still learn them. Just wouldn’t be able to use them.
