I heard in game they were releasing TBC in a few weeks so it seems starting late in anniversary I will not be able to hit 60, do professions, get my epic mount etc before TBC.
With only a few weeks will they give a one time boost to 58 like the original classic realms or do I need to grind like heck for the next 3 weeks.

MoP expansion for what is currently cata classic is launching next month later (prepatch is like july 2nd or something like that… and there’s currently a +50% experience buff to get you caught up there)
For this (the anniversary) version of classic that will eventually progress into TBC, they just announced today that the AQ40 patch is coming out on July 10th… And to be clear that’s just the PATCH, NOT the actual AQ gate openings.
TLDR TBC isn’t for a while, you have plenty of time to level a toon, and the only announcement was that AQ patch is coming in just over 2 weeks… so possibly start prepping for that if you plan on raiding AQ… If you’re literally just TBC waiting room you likely still have time to level from like 30-60 entirely sitting around and waiting on rested XP only.

Even if you start when the tbc prepatch hits with talents and quests and more important exp nerfs and a possible joyful journeys you will prob have time. But I would start now unless you want to be a H-paladin or A-shaman,.
