I would just love to play a nightborn elf. Yes I know they are just changed nightelves but seriously they look so much cooler. I would buy a race change right now if I could. Also been hearing a lot of talk online from people theorizing about these guys becoming a possible playable race. Anyone else think there might be some evidence for this happening in the future?

Not likely. It would be a pleasant surprise, but I doubt it will ever happen.
Shal'dorei would be nice for Alliance, but I'd much rather see Ethereals as a neutral race, considering their quarreling with the Void.
I would rather they just be a choosable "skin" for the night elf race.

Subrace? Sure. New race? Fel no.
I'd rather just have subraces than any new races for a long time, anyway. The races we have now already struggle to get any spotlight time; I don't want to just keep piling new junk on top of the pile that's going to rust like everything else once its introductory expansion is over.

Blizzard said they where never doing another neutral race, and giving them to any one side would leave the other feeling robbed considering how much work they put into saving their butts.
They're basically just night elves with different animations.

Yes, that would be great also. Something that can be chosen in character creation or barber shop. Pick your flavor.
Even putting aside the whole issue of them being a subrace or a full-fledged new one...
They'd need a lot of missing animations put back in to bring them up to par with the already playable races. Just try using Roll as a monk when you're under the Masquerade buff - they just awkwardly hop through the air like tauren.

Instead of new races.. I'd like to see Blizzard show many of the existing races some love.. When was the last time Gnomes, Dwarves, or Tauren gotten any attention or any significant expansion of their lore in the game (not since pre-WoW).
Also you can't forget about Goblins and Worgens.. they have been abandoned by Blizzard since the launch of Cataclysm to the point that their 3D Models didn't receive an update like everyone else. Even to this day, Blizzard would rather update random critters models no one cares about or make yet another alternate druid appearance, but still Goblins and Worgens look horrendous and low quality standing next to everyone else and standing around in new Dalaran.
I would like to see Blizzard work to improve and expand upon what we currently have and have forgotten about.

After seeing how racist Tyrande is about elves other than nightelves.. They wouldn't be Alliance if they were added.
The level of disdain she shows us for deigning to help the mana addicts after she oh so gracefully allowed us to use the tears of Elune.... oh and we dared to be seen by her before the final fight against the Legion.
Sokay Tyrande, you can go back and let those who care about the world fight just so you don't have to dirty yourself with the presence of the blood elves and Nightfallen.

Tyrande has legitimate reasons to be wary of the Nightborne and Nightfallen. You have to keep in mind that she was there in the forefront during the War of the Ancients and saw how the Nightborne turned their backs on the other Elves and all of Azeroth and betrayed and abandoned everyone else in the fight against the Burning Legion.
Tyrande is a leader, she is also a proud soldier. To her, the Nightborne shown themselves to be cowards who turned their backs on their fellow elves when they sealed themselves off from the world. They left everyone else to fend for themselves against the Legion threat and essentially left them to die in their time of need.
The Nightfallen, led by First Arcanist Thalyssra will have to regain her trust, because as far as she knows, they will return to their old ways and turn cowards again, and won't be there when they are needed once again in the fight against the Legion.
Slowly but surely as we progress in the new storyline in 7.1 and 7.2 and beyond, when Tyrande can witness firsthand, the Nightfallen's plight against the Nightborne, against Grand Magistrix Elisande, and against Gul'dan and the Burning Legion, Tyrande will inevitably come to find an ally in and find trust in the new Nightborne.

So far the only ones in Suramar who seems to actually care about forming a cohesive fighting force to take on the Legion entrenched in Suramar City is Liadrin, Khadgar, and the Nightfallen.
