Just picked up Engineering on my Hunter. What are the items from each xpac that are actually useful past their level bracket? I know Jeeves is Northerend Engineering and Goblin Glider Kits are WoD but that’s all I know.
Pandaren Sky Golem mount and two rocket mounts.
Which rocket mount you can make depends upon wether you chose the Goblin or Gnomish engineering specialty in Classic engineering.
You choose a specialty at 200/300, classic engineering.
For the Pandaren mounts, helps to have an alchemist maxed out in Pandaren alchemy to transmit ores into Truesteel.

Loot-a-rang is Cataclysm engineering, I think. As Namsinga said, it’s my top engineering item, and why most of my new characters have engineering. It’s also a toy, so once you’ve learned it, all your engineers can use at engineering skill 1.
While the Goblin Gliders you can make are WoD, the tinker you can add to your own cloak is from MoP.
Either the gnomish army knife (Wrath) and Ultimate Gnomish Army Knife (WoD) are nice for clearing up bag space for profession tools and getting a chance at being able to rez a teammate out of combat. The WoD version has a shorter cooldown on the res, which I think it the main difference.
The various key explosive things are useful to have around if you run lots of older dungeons and locked chests make you crazy. These don’t show up in more modern dungeons, so I just go with whatever was cheapest to make. I usually end up with several of the MoP ones just from leveling MoP engineering. (They’re not worth it to open the chests you loot from mobs now that you can make a class trial rogue to send them to.)
Moll-e (Wrath) is very nice so you can pop up a mailbox anywhere with a fairly short cooldown. This is also a toy, so you only have to make it on one engineer. (Although the engineer needs to have Northrend 50 skill to use it.)
You’ll want to make the various transporter/wormhole items from each expansion. At least until they add the Caverns of Time portal, the Gnomish engineer’s portal to Tanaris if very nice and I find it more useful than the Goblin one to Winterspring. (In BC goblin engineering gets Area 52, while gnomish gets just outside Toshey’s station — far enough out to be safe for horde characters.)
