Apparently, there are other New player professions questions. My question has nothing to do with how much gold I can make. I have noticed the gripes about the uselessness of gear and weapon making professions as they never really matter except when you get to the very end when you can make useless crap until you unlock the ability to make legendaries of which you can only wear 1 piece. So, Are there professions that will actually benefit me as I level or at end game?
I used my boost on this Paladin and I have started my journey through the SL story and I am at the end of the Kyrian part and needing to start Maldraxxis when the servers go live.

Yes, definitely get engineering. Then buy the wormhole generator toy. You will be able to port to different zones using it. https://www.wowhead.com/item=172924/wormhole-generator-shadowlands You can use this with level 1 engineering

It’s a matter of having the patience to learn the intricate niches of each profession.
People that tell you that professions are useless, don’t know how to use professions.
Period.
EDIT: As a more than a decade long Engineer, I also support the other comments. As a solo player, the benefits that Engineering provide (Especially to a paladin) are unmatched. Utility and ease to travel, it will make your life much more enjoyable if you take the time to build everything you need.

All my alts switched to engineering in SL because SL travel was such complete dook. Wormhole was the best profession buff in the expansion. Now that we have flying and unlocked Oribos portals it’s not as necessary but I’ve yet to regret it or switch back to any other profession.

You can level engi and make the toy, but it’s probably easier to buy it as you will be able to use it right away.

Besides engi, I would recommend enchanting. You can disenchant the gear you get while leveling and level the profession as you go, and enchants always sell. You could also choose a gathering profession instead, but it’s tedious to mine resources on most classes, so I usually do it on a druid.

Professions are wonderful. At the start of every expansion I make a few million gold from people who want to pay 150k a pop just to get a slight upgrade. I think I made 2.5 million last expansion before the fools ruined the market for people who were smart enough to gouge the less intelligent and impatient players.

It all depends on what you want out of the profession. Nowadays I don’t see them as super valuable TBH, but they have some perks. People have been championing engineering here, although I’ve never used it but I could just be missing out.
In BFA you could craft two decent items for yourself that remained competitive with mythic raiding loot. After that though I feel like herb/alchemy is pretty much the GOAT to go with because everyone can appreciate having lots of potions and flasks on hand. Then again nothing stops you from buying them if you’re not strapped for cash.
Generally I have always tried to spread professions across classes in an effort to be self sufficient, but over time I have worried about that less and less. I like having herb toons just so when I play I can gather herbs for my own flasks and potions which tend to be the most expensive things. The gems and enchants usually go for almost nothing these days.

Crafting professions are horribly designed in this game. Even to gear my alts I cant improve their gear until they are level 60 and not when they need it most.

Armor crafting professions have been a joke since WotLK.
lol, well everyone can make up their own mind what those are worth to have but it seems to me like a whole lot of waste mats to level up a profession for that.
I started this expansion late and I am rather doubtful any of the professions are worthwhile having even for just your own use.
The most helpful for me is Alchemy and herb picking or enchanting and tailoring.
All professions can be helpful in some way but never expect great gear from them. Although for getting a kick start early on in an expansion it can help but not for the long haul. The best gear drops from the game. (as a general rule of course)
I’ve always found professions to be a terrible waste of time. Unless, of course, you’ve nothing better to do. I must admit, though, that completing the professions in Shadowlands has been less of a chore than in previous expansions. That said, I’ve found Skinning/Leatherworking to be the most useful this expansion.

Was an engineer since vanilla, and made the mistake of dropping it (and losing all my recipes) for blacksmithing. I found that engineering has been an unsung hero to leveling.
TLDR: Engineering and jewel crafting might be useful hand and hand.
Not very many sadly. Enchanting, alchemy, and engineering are the only good ones. I’m probably forgetting some. This is the way I see it
-incription: small rep boost, glyphs, and very small single boss raid buff
Blacksmithing: skeleton keys and legendaries
Alchemy: 2 hour flask, YES
Enchanting: lazy man’s gold. Disenchant stuff make stuff and enchant your own gear. No extra work.
Leather working: legendaries
Tailoring: flying carpets and legendaries
Engineering: Wormhole to almost every xpac, mail bot, repair bot, battle res (though if you only do SL engineering just wormhole and repair bot)
