This is most likely a very dumb question, but I come back from a 3-4 months hiatus from WoW, so it might not be as obvious to me as it should be.
I was looking to make a new night elf character, and I noticed a pasty white skin with red eyes that is new. Mind explaining to me what the lore explanation for it is? I’m just curious. I feel like I missed a lot of lore :'D

Great question! The option you’re seeing is called Darkfallen, and because many Night Elves were killed during the burning of Teldrassil, you can play as one of the fallen who were raised into undeath.
Lore wise, this would give your character the option to be Forsaken, if she chose. Though, that would cause complication with your Alliance friends in RP, more than likely. It is also quite likely that the some of the Darkfallen Night Elves would have attempted to return to their people, so RP may let you see if your character will be accepted.
Void Elves can also be Darkfallen, along with Blood Elves. The Blood Elf option is the original Dark Ranger theme that everyone has loved and wanted for years. Furthermore, it’s been explained in the Sylvanas book that all elves who perish and are raised into undeath, minus Death Knights because of the specific sort of ritual used, are considered Darkfallen.

Happy to help. I think you’ll really like it, if you want to pursue it. It can be used on any class, and there are also scars to accompany your dead-ness and emphasize the character’s story.
Have fun!

Yeah I think this is part of the new stuff they just added with the patch.
