Well if you want to get technical then there’s 8 human variants lol.
Humans, Worgen, Kultira, Forsaken, Gnomes, Dwarves, Dark Iron Dwarves, and Mecha Gnomes.
You could make an argument for Earthen in the lore but I won’t stretch it that far.
We don’t need any more Elves. And Helfs are already in this game in two flavors. They are not genetically different from Belfs or Velfs.

Gnomes and Dwarves is already taking it too far. Pointy ear humans are literally descended from Elves, dwarves and gnomes are their own thing.

Give me a race that’s badass that has scars and flaws, big, strong, I don’t want to play a scrawny elf that’s afraid to ruin their nails
