I can’t decide on which class/spec to go with. I definitely need a change from my mage. I’ll still play her here and there, but what’s some advice someone could give me on choosing a new main character? I usually focus on a single character, as I don’t have time to play like I use to. I usually just farm gold, do world quests, and complete quests.
Lineup:
Protection Paladin (Holy/Ret: here and there).
Shadow Priest (Disc/Holy: not going to use them).
BM Hunter (MM/Survival: not going to use them).

Of your line-up, I would definitely go with Prot Pally.
It’s one of my own two favorite specs for questing/world, (the other being Frost Mage) but there is no doubt in my mind that Prot Pally is the most self-sufficient spec in the game, even among the tanks, with an amazing toolkit. You can handle anything … and Avenger’s Shield and Wings are great fun as well. Not to mention great transmog options! 
I find SPriest horrible for questing. I remember times when Shadow and Disc were both viable, but I don’t know how you even survive rares nowadays as Shadow, since your heals are really gone, and you have no kiting options,
BM Hunter is the old reliable. Very chill, very easy, spec for questing. It doesn’t have the really hardcore survivability of a Protadin for the Rare-Elites or large pulls, but you do often get through things faster. BM is always A-Tier for world content. And you get the extra fun of finding more pets to tame, if you like that.
And since you mention BM, I’ll add Affliction Warlock. With a Voidie, I find Afflock is like, but even more chill than, BM Hunter, though most people wouldn’t believe that’s possible. Just stand there and throw DoTs on things while your Voidie holds them. Heal your Voidie every now and then and you’re good.
