Being that necrotic strike debuff only shows up to the current health of the enemy player. Does that mean further necrotic strikes are useless if you already have the players entire current health greyed out from necrotic striking?

Nope, you can stack above that. It’s an absorption so you can absorb more than the total of someone’s health.
