I wish there were more custom tiger and wolf skins in the game. Two of my fav.
For a hot minute, it was the the Violet Panderan Phoenix, since it’s no longer available… But I’ve since made peace. 
(It helps that I’ve yet to actually see anyone on it lol.)

I wouldn’t say jealous, because I don’t care about mounts all that much, but I have wanted the Grinning Reaver for a really long time. It’s the coolest store mount IMO, but it was a limited time thing and I don’t think they’ll ever bring it back. 
I’m a big fan of the Rukhmar mount, but I don’t kill it as often as I used to.
Mainly mounts I’ve been farming the heck out of and hasn’t dropped for me yet or won’t anymore due to game changes:

Felsteel Annihilator - A friend and I was mog hunting in HFC on mythic, and the mount dropped for him but not me… Dat 1%… >:(
Aeonaxx (Deepholm) - Another friend of mine came across the rare the first time she stepped in there. I ran 13 toons thru that place and never once saw it.

The Alliance PvP hippo mount. That thing is adorable.

None. The only time I’d turn my head and see a mount and tell the person “woa, nice mount!” was the Warlock class mount.
After this, I don’t think I’ve even noticed people’s mounts. And I don’t even know if they are rare or not. I mean, I’ve seen the rooster, and while I acknowledge it’s rarity, it’s a rooster. So… I am not jealous as I know I’d not use it.
Swift Zulian Tiger. A dude I know wanted the raptor mount, I wanted the tiger. We farmed that raid every week for a long, long time but never got it. Then it was removed. 
Everytime I see someone on that mount I’m reminded of my failure.
Invincible. More irritated about it now after someone outbid me last second on the BMAH for it (for the SECOND TIME in the span of 2-3 years), especially after failing to get it to drop on multiple alts for almost 10 years and then waiting 12+ hours at the BMAH only for it to get snatched lmao.
That “1%” drop can bite the darkest part of my rear.
Son of Galleon. Every time I see it, which is rarely, I’m like “mannnnnnnnnn”.
I feel your pain. Invincible was by far the worst mount farm ever for me at 625 attempts when I got it. And now you can’t even make a lockout for heroic anymore, I can only imagine the frustration.
If you want TLPD and Aeonaxx I can tell you how I got both within a week. First make a second account, a starter account works fine. Take one toon through thel eveling intro, Exiles Reach I think it’s called, and choose to go to Orgrimmar when you’re finished. Take the starter toon to Chromie and choose Cata time. Then invite that toon to a group and choose party sync and warmode. The only people you will be zoned with are people on chromie time party sync warmode, which is unlikely to ever be in Deepholme or Storm Peaks.
Aeonaxx was there the first time I went, but you need at least 3 to take her down due to weird scaling. For TLPD, it took a few days, but every time I went there, Vyragosa was up until after a day or so I got lucky. Kill her, come back about 4 hours later, try again. There will never be a need to sit there and wait for days, as there is zero competition. This also works for farming rare hunter pets, they’re up 99% of the time. It also works well for leveling toons 50-60, get in party sync, and go to classic zones and kill rares. Hillsbrad foothills alone has over 20 rares and they give about 3% of a level per kill, and they’re easy to kill.

I haven’t been able to get Invincible. Or the AShes of Alar one. I’d love to get the Hivemind too, havne’t even TRIED for that one. Wouldn’t mind the Hand one either (I’m so specific 
)
I’m actually a little worried about when they put in the Jelly Cat mount and what hoops we’ll need to go through for it. Fingers crossed it just gets cash shopped.

I play just a few hours a day and am approaching 500 mounts (character).
You basically buy up all the vendor mounts, reputation grinds, clear old raids, pick a rare and go after it with all your alts, Legion class hall campaign mounts, do some tradeskilling for a few, run the holiday events on all alts when they’re available, and on top of all that there’s a few dozen to be bought on the AH.
There’s plenty of ways to get mounts, it’s just about how much of your playtime you devote to tracking them down. Simplearmory and Wowhead have been invaluable to me.
I think its a bliz con mount…looks like a horde blimp.

None because when I am playing I don’t spend my time looking at what mounts other players have.
