More functionality. Goats/Rams can climb things that are too steep for others. Winged creatures can take further falls without damage. Can’t dismount people on horses. Bears cause mobs to flee a short distance. A mining mount. Turtles have additional speed in water and provide water breathing. Yaks can knock down trees…whatever. Get us off our water striders and golems.

Don’t forget walls with spiders! Also I think flying mounts, or at least kites, could have a glide mechanic when we don’t have flying.
