Probably prot Paladin.
Or maybe demon Hunter. You can literally jump away from any danger.
I’d assume Paladin, since they can all just bubble hearth if things go sideways.

Im gonna vote warlock. Void pet tanks, you have a life drain for the life you lose healing pet…or use it to stand in fire while levelling. Good aoe too.
I vote against voidwalker, because BFA pretty much neutered it into borderline nonfunctionality – blueberry’s made of tissue paper and loses aggro if you sneeze wrong. You’ll still kill everything, but you’ll spend half your time drain tanking and it feels terrible because the key class feature straight-up doesn’t work.
Demo is where the faceroll’s at for lock. Felguard is a voidwalker that actually functions.
I’m going to say fury warriors have some crazy survivability. I pulled 7 mobs and didn’t drop below 60% health. Victory rush and bloodthirst FTW.
Also any tank spec, hunters, warlocks, rogues (vanish just flat out drops combat), night elves on any class because of shadowmeld.
Yea really take your pick. It’s difficult to die in wow today.
I don’t play tank classes but I love ranged classes and the Hunter and Warlock class can survive pretty much anything.
Having a pet that can tank for you while being able to heal yourself as well as your pet is one of the big reasons I love the Hunter and Warlock class.

Vengeance (tank) DH, if you haven’t yet built a Demon Hunter.
You start at lvl 98 first of all, practically a free boost. Second, in the tank spec you just agro tons of mobs and aoe them down without your health ever passing below 70% (in my experience). I tanked TW dungeons with only a few hours of experience playing the spec.
Prot Paladin.
Unless you do some truly… questionable things… you are basically unkillable while having the same DPS output as a Ret Paladin until max level.
Druids may be similar, but I’ve never played a Druid.
Leveling up from expansion to expansion, though… ever since MoP I could do as much damage as Ret, but all those fun “go here and kill 15 things” quests… yeah Ret can handle 1 - 3 mobs at a time, maybe 4 if you don’t mind stopping and healing between pulls.
Prot just pulls the whole area and kills everything all at once in the same time it takes Ret to kill 1 pull. Then mounts up and goes to find something else to kill.
Guardian druid is as unkillable as any other tank, but the DPS kind of blows. It’s only worth doing over Balance if there’s enough around to pull at once, and mob density in leveling zones is rarely high enough.
That said, Guardian is awesome in BFA solo because everything’s super dense.
This one… I’ve regularly soloed group dailies with proper timing of heals and pet shields. Affliction warlock is also really good with it’s life drain dots.
Survival hunter, fury warrior, frost mage and destro lock were my most hardy characters for the Legion>BFA levels.
Havoc’s probably up there, too. I don’t like DH, though. Monk’s more fun.

Maybe it was nerfed but its never been an issue for me unless i get stupid with pulls…and i do pull with it before attacking…
Once you get some decent gear, his ability to hold threat over you is nonexistent.
Meanwhile, beast cleave holds threat nicely, spirit mend keeps my pet up without a channel and I can feign or misdirect if things go south.
Mind you I leveled in 8.0, and I haven’t soloed as anything but demo since. I would just rip aggro the moment I put up more than agony/corruption/siphon. The moment the UAs started going up (sometimes even before then) it lost aggro and would never get it back before the mob died even if I stopped attacking.
Plus the range on the taunt was ridiculous and it’d be yanking birds out of the air and stuff until it got overwhelmed. Just wasn’t worth the trouble – at that point I might as well have grimoire sacrificed the damn thing and face tanked from the start. Felguard fixed everything.
If you haven’t leveled as a Protection Paladin, you’re really missing out on what survivability means.
Instant self-heal on a low cooldown? Yes.
Large number of damage reduction abilities? Yes.
Consistently high AoE damage output? Yes (relatively speaking - I mean, why pull fewer than 5 mobs anyway?)
Lay On Hands emergency heal? Yes.
Bubble of invincibility oh crap button? Yes.
Giant Space Laser? Yes, but only if you’re Lightforged as all good Paladins should be 
Truly, you’ll be so caught up in shield tossing hammer smashing consecration laying awesome that nothing will be able to kill you.
Protection Paladin. Every. Single. Time.
Blood DK is good, you basically roll your face across the keyboard. Which is why I have a few.
