This is subjective but what do you believe to be one or some fun tanks to play?
I really enjoy blood DK due to how long I’ve played DK (I have 3 on different servers), and I actually enjoy brew I’m just not good at it. It has a fun unique playstyle.

glides in
I have played many different tank characters
crashes down after leaping
I find all them equally fun
charges in with the hunt
Was coincidence that I only play this one character currently
turns into a demon

Prot warrior. The rotation is amazing, the animation is superb, the feeeeeeel of the movements is badass, and the transmog is second to none.

was my main in Cata, very fun to play 
Guardian, the only tank spec I can bear these days.

At the risk of being jumped on for OPness, I really like prot pally.

In terms of having lots of mob repositioning abilities and always having something to click, Brewmaster monk is the most fun. If you can get pass the really bad DPS flaw they have.
For the all purpose tank, Prot Paladin, you can have the fun of being a Pseudo Healer while tanking. Pretty much with Divine Purpose, Maldraxxi Hammer generating a Charge while also giving a free SoTR on WoG use, you can heal an entire group while keeping your defensive power up.
Being bound to a pony wheelchair is an awful feeling though.
