Which class is most effective in gathering herbs and mining in classic?
I was thinking rogue because I could stealth pass mobs then I remembered how slow rogue stealth is in classic. Any suggestions?

Druid is a good choice, as it has travel form for node to node movement over short distances. Hunter as well as you can have your pet attack a mob and keep running, and have Cheetah for 30/36% speed.

All classes are pretty on par, but as you said stealth is powerful, as well as sap, or pet classes simply because your pet can tank the mob while you mine (in a high contending area)
With the introduction of Layering(non x-server Sharding), the most efficient way to gather will be to switch layers by inviting randoms. Have fun with that!

Druids. Herb in Travel Form, fast movement between mobs, stealth.
Night Elves get Shadowmeld for avoiding mobs. Tauren Druids get bonus to Herbing.
Tauren druid. I can’t recall if classic taruen had faster herbalism or if it stacked with the enchant, or even if that enchant existed in classic. I barely remember last year nevermind 10+ years ago.

If you invite people they join your layer not the other way around.
Also there is probably no way to check your layer so you dont know if you will be joining a new layer if you can get random people to invite you.
And there prob will only be a few layers per realm so its would prob be much less efficient anyway.

Rogue and/or druid.
Find a node, sap/root/hibernate anything near it,harvest, rinse repeat.
Mage is also good for blinking, freezing, sheeping.
