can you still get the legion monk class mount by doing the quests or whatever. or is it not available to accomplish anymore.
You can go back and earn the class mounts. I have done it on a few classes already.

how long did it take you usually per class? is it pretty quick?
No it takes quite awhile. A few days maybe longer depending on how far you are in your class hall campaign already.
I just did it with mage and priest while waiting for 8.3 and some of it is time gated especially the mission table stuff.
You can do it in a day if you actively do the mission board. But takes patience and get to them everytime it’s over
