I have sort of decided on warlock, for raiding and pvp.
I am thinking Mining, for the bonus to stamina and the materials and then engineering, for iron grenades for pvp (and possibly finding the sniper scope recipe to make money on the auction house).
Enchanting sure is nice though...

Mining doesn't give a stamina bonus in vanilla.

Not sure when it was added. I feel like maybe it was WotLK or Cataclysm. I just know it wasn't in vanilla.
Enchanting rings I'm not sure either. I think maybe that was added in WotLK. /shrug

The gathering profession buffs were added in at the end of BC in the WoTLK pre patches IIRC, was a big mess for us tinks as they also allowed any level character to grind those professions to max but latter re capped them.
MY advice would be to take double gathering professions, say mining and skinning or mining and herbalism, send all the ore to a bank alt then sell all the stuff from the other profession once the economy starts to boot, then learn engineering.
While engineering is undeniably useful while leveling doing enough mining or buying enough mats to keep it current on your first toon on a new server is going to be difficult.
Tho those sweet sweet green lenses could be worth it if you can pull it off.
Edit, as for enchanting again IIRC you could disenchant anything with a enchanting level of 1, so level that bank alt to level 5 and use it to shard all the boes that are not worth selling.

Not in vanilla. None of them gave you buffs.
Engineering can be lucrative so no worries there. I would say mining can also be extremely lucrative if you're knowledgable of where to go and what to look for.
As far as usefulness engi is BiS raiding and PvP so that is a great choice.

do engineering/mining till you're maxed out with your trinkets, and then drop mining for tailoring.
If I'm not mistaken, some of your best pre raid BiS is BoP from clothcraft. Something to keep in mind.
