If it makes story sense, I see no reason why not. Cat races are common in fantasy games. It’s almost weirder that we don’t have one yet.

Furries are the biggest whales known to existence so I’m really not sure why Blizzard isn’t trying to pander to furries more often. Just add in all the animal people at this point as playable races. They’ll print money doing it.

There is a lot of potential for Saberon as a playable race, especially since some escaped to Azeroth when they came with the AU Mag’har Orcs in their unlock scenario.
