I can use the currencies tab on my charter screen to see radiant memories, how do I see memories of Kalimdor, etc and how to combine to make an essence?

Those aren’t currencies. They’re items in your bags or banks (potentially including the warband bank).
Collect at least 20 in one place and “Use” (right mouse button click) the stack to create the correspondending Essence. Collect all three essences and buy the ring item from the vendor in Dalaran. Use the ring and it will combine with the essences to create your first instance of the heirloom ring. Once that happens, you can discard the created ring because your account will have the heirloom available to create on demand.
