He trained and created the first paladins, feel free to look him up
And currently in charge of the entire Conclave. So I’m not sure why OP suddenly wants to leave all of the entire Azerothian priesthood leaderless and oust the current Paladin leadership.
I’d much rather see Alonsus help with the Lordaeron rebuilding efforts first. Let’s get us Forsaken a proper home again… then maybe we can think about class trainers.

If you also look he does many other things even as he is in the conclave so limiting him is not going off the lore, its going off how you feel
It doesn’t. The guy is in charge of so much right now. Paladins have their own leaders who train. Quite a lot of them.
So why would Faol suddenly run off to train Paladins?
What purpose does it server except to further screw over Priests and their lore? Why do Palafins need yet one more trainer? He only got the order off the ground and then left it to be run by others. Why go back now?

Not every race with paladins have their own leader thats a paladin, they can have “prominent figures” but thats not the same thing, You also said “why would faol suddenly run off to train paladins” for one thats not really running off if he can juggle multiple things at once which even since hes joined the conclave hes done many things in that time after outside the conclave, Him training paladins would just be more story building with him which isnt impossible and answers your question as to why he would do it because more storybuilding is never a downside for blizzard unless they execute it wrong which is pretty difficult to do with this case
Most the people who play paladin dont even know if they have a leader, They mostly go off of the whole “follow the light” aspect of the class which is fair aswell, Theres nothing stopping him from being a paladin trainer, not even the conclave part of it

While that’s true, it happened when there were no Paladins so they needed to come up with Paladins from scratch.
Right now there are plenty of Paladins, and the Forsaken Paladins would be better served by being trained by an actual Paladin.
My suggestion? Revive Sir Zeliek and give him free will.
