I chose WOTLK as my leveling progress from Chromie. How do I know which quests are directly tied into my story progress/main scenario? I don’t want to do side-quests all day long.
I don’t think they implemented that as a concept on the map until much later than Wrath.
Maybe the best way will be to look at the Achievement for the zone you are in. However, it likely contains multiple questlines you might consider “side-quests.”
Only other options I can think of is looking at a third party resource like this

So how do you know when to move onto the next zone or which quest leads you to the next zone?
There will be quests that lead you into the subsequent zones for sure, but it didn’t really work this way in early expansions.
You just moved on when you wanted to.
As mentioned, I imagine most people moved on after they got the achievement.
Howling Fjord: Vrykul stuff
Borean Tundra: Blue dragonflight and mecha gnomes (not the allied race)
Dragonblight: dragon lore, titan lore, some fun stuff with Naxxramas
Grizzly Hills: Worgen lore and do the drakuru quests
(Do Drak’theron keep dungeon after finishing with Drakuru)
Zul’Drak: trolls and lich king
Sholazar Basin: there was the titan quest line with the waygates but I haven’t done that in forever
Storm Peaks: Titan stuff
Icecrown: setting up to assault the citadel. Lots of fun lich king lore here
