Which class and spec is the hardest to master or get better at? In your own words or experience during dragonflight.
Priest, easily. Shadow and Disc are both pretty demanding, despite what some people who haven’t played Disc think of Disc.
Shadow Priest> Demo>Arcane.
Warlock and mage are more engaging than spriest to me. They take more effort than some DH playing plebs would have you think.
Demo? Really? I find it to be the simplest of the 3 lock specs.

It has pretty unforgiving rotation and I can’t get my minions more than 9, maybe 11 if I’m lucky. Then I see people with an army of minions, but it is most likely me being a noob if anything.

I feel that. I’m not much of a lock player either.
Arcane looks simple till ya try to do well with it, demo’s kind of the same. More nuance than what’s initially apparent.
When in doubt, Fire will take it out.

Arcane I wouldn’t contest, it’s easily the more complex of the three mage specs and decently complex in a vacuum too.
i never experienced it myself but its shadowpriests if you listen to them 
they sound like their class is the hardest in the game and takes too much setting up before damage comes in.
now i have no idea if it’s actually true but that’s another story.
You got to give up this idea that there is any other classes beside warrior. This giving up part is what is hardest to master and get better at.
