Do you have to do the 7 challenges on 7 different classes or can you do multiple challenges on one class and that would still count toward the mount credit? For example can I do 3 different challenges on my mage and that counts towards 3 of the 7 challenges or what?

Just the 7 challenges.
There is only 7 challenges. If you for example do moonkin + feral + guardian + resto you already done 4/7. Then you would have the other 3 left no matter what char you do it on (the halls of valor one, the frostmage + voidwalker one and the last I dont remember)
Each challenge once.
Feat of strength if you can do all 36 specs though.
Which really should be awarding the OG appearances considering the steep amount of effort someone has to put in for that.
