You know, I can’t make an alfredo sauce at all. I try, and it’s a super easy recipe, but everytime it just get’s lumpy, and the parmesan doesn’t seem to melt right. maybe I’m using the wrong type of parmesan?

If it’s lumpy it’s because ratio of the flour? Is wrong and may also have been added in at too many differing cooking stages.
I don’t think you put flour in alfredo sauce.
Isn’t there a flour like powder you put into it to thicken it up?
Typically i just use heavy cream, garlic, parmesan, salt and pepper, and maybe a bit of the pasta water. I just did some digging and I ran across a recipe that does use a roux as a base. I’ll try that next time.
Might have to do with the pan you’re using. If you are using a lower quality sauce pan it will heat unevenly. I always recommend splurging a little for a real heavy sauce pan.
