Had anyone attempted to attack her after her win, Saurfangs entire sacrifice would have meant nothing and there would have been massive bloodshed.

I didn’t see it that way. She clearly lost the Horde before she killed him, killing him was just her finally removing a thorn that cost her so much. I bet if the Alliance had jumped on her, most of the Horde would have joined in. And while I have no doubt that she is far more powerful now that ever before, I doubt she is ready to fight two armies and all the various faction leaders that were present at once.
